Instructions:

  1. Rinse the lentils under cold water and drain them well.

  2. Heat the olive oil in a large pot over medium heat. Add the carrots and celery and sauté for about 5 minutes, until they begin to soften.

  3. Add the diced tomato, cumin, coriander, turmeric, and paprika to the pot. Stir well to coat the vegetables with the spices and cook for an additional 2 minutes.

  4. Add the lentils to the pot and stir to combine them with the vegetables and spices.

  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for about 30 minutes or until the lentils are tender.

  6. Season the soup with salt and pepper to taste. Adjust the seasoning as needed.

  7. Remove the pot from the heat and let the soup cool slightly. Use an immersion blender or a regular blender to puree a portion of the soup to achieve your desired consistency. You can leave some lentils whole for texture if desired.

  8. Return the soup to the heat and warm it through, if necessary.

  9. Ladle the lentil soup into bowls and garnish with fresh cilantro or parsley, if desired.

  10. Serve the soup hot and enjoy!
